What Is Matcha?
Matcha is made from high quality tea leaves that are ground into a fine powder. How matcha is grown, harvested and processed is what sets it apart from any other tea in the world.
Made In The Shade
About 40 days before the leaves are harvested, they are gradually shaded until about 90% darkness. This concentrates the nutrients and cuts out the bitterness.
Best Buds
Only the youngest, greenest, best buds are carefully selected and handpicked. This happens once a year and is called the “first flush”. Picking the best buds ensures the matcha will have the greenest color and most nutrients.
Powder Dreams
After the best leaves are selected, they are steamed, deveined, destemmed and stone-ground into a magical green powder called matcha. Stone mills have been used for centuries to prepare high quality matcha. Grinding the leaves slowly preserves it's bright color and qualities.

Color
Most of the matcha on the market is dull green and sub-par quality. High quality or ceremonial matcha has a deep, vibrant green color. The color indicates the quality of the leaves used.
Taste
High quality matcha is smooth and has a sweet taste with very little bitterness. When it's good you don't need to mask the flavor with milks or sugars.
Origin
The best matcha in the world comes from only one place - Japan. If your matcha is sourced from anywhere else, it's simply not the best. We source ours direct from small farms in Japan.
Price
The process of making high quality matcha is much slower and more labor intensive than producing low quality matcha. Because of this, price is usually a good indicator of the quality of the matcha. If it costs more to make, it's going to sell at a higher price.

How To Prepare Matcha
1. SCOOP
Scoop 1 tsp or 2 bamboo scoops of matcha into your sifter over your matcha bowl.
2. SIFT
Sift over your matcha bowl, using our stainless steel sifter. This gets all the clumps out to ensure you'll get the smoothest cup of matcha.
3. POUR
Pour 1/2 cup of hot water (175° F) into your matcha bowl, over your sifted matcha. Do not use boiling water. If you don't have an electric tea kettle with a temperature gague, you can boil water and let it sit for 4-5 minutes.
4. WHISK
Using your bamboo matcha whisk, whisk your matcha back and forth in a "Z" or "M" pattern fast until it gets frothy. A bamboo whisk is the single most important tool in creating the perfect cup of matcha. Electric whisks don't cut it.
5. SIP
Sip and enjoy your matcha!
